THE GIANT LUPINE OF VAIRANO

The cultivation of the giant lupine of Vairano is an ancient traditional production, which has been reduced in favour of more income producing cultivations, although it is still present in the local and provincial area for the excellent characteristics of the product.

This particular lupine, which for its big dimensions is also called "Lupinone di Vairano", "Gigante di Vairano" and "Lupinaccio" is cultivated in the towns of Vairano, Patenora, Presenzano, Marzano Appio, and Caianello, in the province of Caserta.

It is seeded mechanically and harvested during the early hours of the morning, on days that are not too humid; once harvested and separated from the plant the pods are slowly dried for at least three days and then kept in a dry place in wood tanks or jute bags. Before being eaten they are soaked in water for three days and then pickled. Ever present during patron festivals they are eaten as a snack or as an appetizer along with olives and pumpkin seeds.
